The Story · Inès & Théo
A chef, an architect,
and a courtyard
they refused to sell.
Inès trained in Lyon and cooked in Tangier. Théo restored riads in the medina for fifteen years before he found this one — a derelict courtyard house with a fig tree growing through the roof.
They spent four years rebuilding it by hand with the same craftsmen who taught Théo his trade: the zellige cutter from Fez, the tadelakt master from Salé, the cedar carver who once worked on the Bahia Palace. Aurore opened in the spring of 2023 with twenty-four suites, one chef's table, a hammam below the courtyard, and a cinema where the stables used to be.
The fig tree, against everyone's advice, stayed.
